  • 2 medium zucchinis, grated (about 2 cups)

  • 1/4 cup all-purpose flour (30g)
  • 1/4 cup grated Parmesan cheese (25g)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons vegetable oil, for frying

Cooking Instructions

  1. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. Then, squeeze out the liquid from the zucchini using your hands or a clean kitchen towel.

  2. In a large bowl, combine the grated zucchini, flour, Parmesan cheese, garlic powder, onion powder, dried oregano, dried basil, black pepper, and beaten eggs. Mix well until all the ingredients are evenly incorporated.

  3. Heat vegetable oil in a large skillet or frying pan over medium heat.
