  • 4 medium zucchinis, spiralized (about 4 cups)
  • 8 ounces (225g) mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons (30g) unsalted butter
  • 1 cup (240ml) heavy cream
  • 1/2 cup (45g) grated Parmesan cheese
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Fresh parsley, for garnish

Cooking Instructions:

  1. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5 minutes.

  3. Push the mushrooms to one side of the skillet and add the spiralized zucchini noodles. Cook for 2-3 minutes until the noodles are just tender. Be careful not to overcook them, as they can become mushy.

  4. Reduce the heat to low and pour the heavy cream into the skillet. Stir in the grated Parmesan cheese and season with salt and black pepper. Cook for another 2-3 minutes until the sauce thickens slightly.

  5. Remove the skillet from heat and garnish with fresh parsley. Serve the Zucchini Noodle Alfredo with Mushrooms immediately.
