  • 4 medium zucchini, spiralized into noodles

  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 cup (15g) chopped fresh parsley
  • 1 teaspoon (5g) garlic powder
  • 1 teaspoon (5g) onion powder
  • 1/2 teaspoon (2.5g) salt
  • 1/4 teaspoon (1.25g) black pepper
  • 2 tablespoons (30ml) olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 ounces/400g) crushed tomatoes
  • 1 teaspoon (5g) dried basil
  • 1 teaspoon (5g) dried oregano
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Cooking Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, milk, grated Parmesan cheese, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat one tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  4. In the same skillet, add another tablespoon of olive oil and sauté the diced onion and minced garlic until they become soft and translucent, about 3-4 minutes.
  5. Add the crushed tomatoes, dried basil, and dried oregano to the skillet. Season with salt and pepper to taste. Stir well to combine.
  6. Return the meatballs to the skillet and simmer in the tomato sauce for 15-20 minutes, or until the meatballs are cooked through.
