One-Skillet Upside-Down Apple Cake

An upside-down apple cake made entirely in one skillet: caramel, apples and batter, then flipped onto a plate.

Total Time 1 hour 15 minutes
Servings: 10 slices

Ingredients

For the caramel
  • 4 tbsp / 60 g butter
  • 1/2 cup / 100 g sugar
  • salt a pinch
  • 4 tart apples each cut into 8 wedges, peeled or unpeeled
For the batter
  • 2 eggs
  • 1/2 cup / 100 g sugar
  • 1/2 cup / 120 ml vegetable oil
  • 1/2 cup / 120 ml milk
  • 1 tsp vanilla extract
  • 1 1/2 cups / 210 g all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon

Method

  1. Heat the oven to 350°F (180°C).
  2. In a 10-inch (26 cm) cast iron or stainless steel skillet, melt the butter with the sugar and salt over medium heat. Cook 4 to 5 minutes without stirring, until the caramel turns amber.
  3. Take the skillet off the heat and arrange the apple wedges tightly in a circle, rounded side down. Return to medium heat and cook 5 minutes, until the apples start to soften and release juice.
  4. In a bowl, whisk the eggs with the sugar, oil, milk and vanilla. Add the flour, baking powder and cinnamon and mix just until no dry flour remains.
  5. Pour the batter over the apples and gently spread it to the edges.
  6. Bake 35 to 40 minutes, until a skewer inserted in the center comes out dry.
  7. Let it rest 10 minutes. Run a knife around the edge, set a serving plate upside down over the skillet and flip in one move, wearing oven mitts.
