Watermelon Lemon Granita
A four-ingredient frozen watermelon granita, blended, frozen, and scraped into icy crystals with no ice cream maker needed.

Ingredients
- 1.5 lbs watermelon (700 g, rind and seeds removed)
- 3 tbsp fresh lemon juice
- 2 tbsp sugar
- 1 pinch salt
Instructions
Blend the watermelon until smooth. Add the lemon juice, sugar, and salt, and taste.
Pour into a flat metal pan, about 12x8 inches (30x20 cm).
Freeze for one hour.
Remove and scrape with a fork from the edges toward the center. Return to the freezer.
Repeat the scraping every 45 minutes, at least three more times.
Serve immediately in chilled clear glasses.
