  • 1 pound shrimp, peeled and deveined (450 g)
  • 1 cup diced pineapple (165 g)
  • 1/2 cup diced carrots (75 g)
  • 1/2 cup frozen peas (75 g)
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (30 ml)
  • 1 tablespoon fish sauce (15 ml)
  • 1 tablespoon oyster sauce (15 ml)
  • 2 green onions, sliced
  • 2 eggs, beaten
  • Salt and pepper to taste

Cooking Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium heat. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.
  2. In the same skillet, add the grated cauliflower and cook for 2-3 minutes until slightly softened.
  3. Push the cauliflower to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through, then mix them into the cauliflower.
  4. Add the diced pineapple, carrots, peas, and minced garlic to the skillet. Cook for another 2-3 minutes until the vegetables are tender.
  5. In a small bowl, whisk together the soy sauce, fish sauce, and oyster sauce. Pour the sauce over the cauliflower mixture and stir until well combined.
  6. Add the cooked shrimp back to the skillet and stir to distribute evenly.
  7. Season with salt and pepper to taste. Cook for an additional 1-2 minutes to heat everything through.
