Ingredients

  • 4 medium zucchini, spiralized into noodles
  • 1 pound (450g) ground beef

  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 cup (60ml) milk
  • 1 egg
  • 1/4 cup (15g) chopped fresh parsley
  • 1 teaspoon (5g) garlic powder
  • 1 teaspoon (5g) onion powder
  • 1/2 teaspoon (2.5g) salt
  • 1/4 teaspoon (1.25g) black pepper
  • 2 tablespoons (30ml) olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces/400g) crushed tomatoes
  • 1/4 cup (60ml) tomato paste
  • 1/2 cup (120ml) water
  • 1/4 cup (10g) chopped fresh basil
  • Salt and pepper, to taste

Cooking Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, egg, chopped parsley, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Shape the mixture into meatballs, about 1 inch in diameter.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove the meatballs from the skillet and set aside.
  4. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
  5. Add the crushed tomatoes, tomato paste, water, chopped basil, salt, and pepper to the skillet. Stir well to combine.
  6. Bring the sauce to a simmer and return the meatballs to the skillet. Cover and cook for 15-20 minutes, or until the meatballs are cooked through.
  7. While the meatballs are simmering, heat a separate skillet over medium heat. Add the spiralized zucchini noodles and cook for 3-5 minutes, or until tender but still slightly crisp.
