Ingredients

  • 1 medium head of cauliflower, cut into florets (about 4 cups or 400g)
  • 1/2 cup (60g) grated Parmesan cheese
  • 1/2 cup (60g) almond flour
  • 2 green onions, finely chopped
  • 1 large egg, lightly beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Special Notes:

  • You can substitute the almond flour with regular flour if you prefer.
  • Feel free to add extra spices or herbs to suit your taste.

Cooking Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.
  2. Steam the cauliflower florets until they are tender, about 5-7 minutes. Drain well and let them cool slightly.
  3. In a large bowl, mash the cauliflower using a potato masher or fork until it resembles small rice grains. Make sure to remove any excess moisture.
  4. Add the grated Parmesan cheese, almond flour, green onions, beaten egg, garlic powder, onion powder, salt, and black pepper to the bowl. Mix well until all the ingredients are evenly combined.
  5. Take about 1 tablespoon of the mixture and shape it into a small tot. Place it onto the prepared baking sheet. Repeat this process with the remaining mixture, spacing the tots about 1 inch apart.
  6. Lightly spray the tots with cooking spray to help them crisp up in the oven.
  7. Bake for 20-25 minutes, or until the tots are golden brown and crispy on the outside.
  8. While the tots are baking, prepare the Spicy Sriracha Ketchup by combining 1/2 cup (120g) of ketchup and 1-2 tablespoons of Sriracha sauce (adjust the amount according to your spice preference) in a small bowl. Mix well.
  9. Once the tots are done, remove them from the oven and let them cool for a few minutes.
  10. Serve the Cauliflower Tots hot with the Spicy Sriracha Ketchup on the side for dipping.
