  • 4 cups vegetable broth (960 ml)
  • 1 cup heavy cream (240 ml)
  • 2 cups shredded cheddar cheese (200 g)

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish and set aside.

  3. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.

  4. Sprinkle in the dried thyme and paprika, and stir well to coat the onions and garlic.

  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld together.

  6. While the soup is simmering, place the baking dish with the bell peppers in the preheated oven. Bake for 15 minutes to soften the peppers slightly.
