  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil (15 ml)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 4 cups vegetable broth (960 ml)
  • 1 cup heavy cream (240 ml)
  • 2 cups shredded cheddar cheese (200 g)
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish and set aside.

  3. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.

  4. Sprinkle in the dried thyme and paprika, and stir well to coat the onions and garlic.

  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld together.

  6. While the soup is simmering, place the baking dish with the bell peppers in the preheated oven. Bake for 15 minutes to soften the peppers slightly.

  7. Remove the baking dish from the oven and carefully stuff each pepper with shredded cheddar cheese. Be generous with the cheese!

  8. Return the peppers to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

  9. Once the soup has finished simmering, remove it from the heat and stir in the heavy cream. Season with salt and pepper to taste.

  10. Using an immersion blender or countertop blender, puree the soup until smooth and creamy.

  11. Ladle the soup into bowls and place a cheese-stuffed bell pepper in the center of each bowl.

  12. Garnish with fresh parsley and serve hot.
