Ingredients

  • 2 medium zucchinis, grated (about 2 cups) (450 grams)
  • 1 teaspoon salt
  • 1 cup shredded cheddar cheese (115 grams)
  • 1/2 cup all-purpose flour (60 grams)
  • 2 large eggs, lightly beaten
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Vegetable oil, for frying

Cooking Instructions

  1. Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. Then, using your hands or a clean kitchen towel, squeeze out as much liquid as possible from the zucchini.
  2. In a large mixing bowl, combine the grated zucchini, shredded cheddar cheese, all-purpose flour, beaten eggs, black pepper, and garlic powder. Mix well until all the ingredients are evenly combined.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Take a heaping tablespoon of the zucchini mixture and flatten it in your palm. Place a small cube of cheddar cheese in the center and fold the zucchini mixture around it, forming a ball. Repeat with the remaining mixture and cheese.
  5. Carefully place the stuffed zucchini fritters into the hot skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy. You may need to cook them in batches, depending on the size of your skillet.
  6. Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil.
  7. Serve the Cheese-Stuffed Zucchini Fritters hot as a delicious appetizer or as a side dish to accompany your favorite main course.
