Ingredients

  • 2 cups almond flour (240 grams)
  • 1/4 cup granulated erythritol sweetener (48 grams)
  • 1/2 cup unsalted butter, melted (113 grams)
  • 16 ounces cream cheese, softened (453 grams)
  • 1/2 cup powdered erythritol sweetener (96 grams)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (150 grams)

Special note: You can adjust the sweetness of the cheesecake filling by adding more or less sweetener according to your preference.

Cooking Instructions

  1. Preheat your oven to 325°F (163°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a medium bowl, combine the almond flour and granulated erythritol sweetener. Add in the melted butter and mix until well combined. Press the mixture into the bottom of the prepared baking dish to form the crust.
  3. In a separate large bowl, beat the softened cream cheese and powdered erythritol sweetener until smooth and creamy. Add in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust in the baking dish. Use a spatula to spread it evenly.

  6. Bake in the preheated oven for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
  7. Remove from the oven and let the cheesecake bars cool completely in the baking dish.
  8. Once cooled, refrigerate for at least 2 hours or overnight to allow the bars to set.
  9. Cut into squares and serve chilled.
