Ingredients

  • 1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons (30g) unsalted butter
  • 2 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • 1 cup (240ml) chicken broth
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 teaspoon (5g) Italian seasoning
  • Salt and pepper, to taste
  • 4 medium zucchini, spiralized into noodles
  • Fresh parsley, chopped (for garnish)

Cooking Instructions

  1. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the chicken pieces to the skillet and cook until they are no longer pink in the center, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, pour in the heavy cream and chicken broth. Bring the mixture to a simmer over medium heat.
  4. Stir in the grated Parmesan cheese and Italian seasoning. Continue to cook, stirring occasionally, until the sauce has thickened, about 5-7 minutes. Season with salt and pepper to taste.
  5. While the sauce is simmering, prepare the zucchini noodles using a spiralizer. Set aside.
  6. Return the cooked chicken to the skillet and toss it in the alfredo sauce until evenly coated.
  7. Add the zucchini noodles to the skillet and gently toss them with the chicken and sauce. Cook for 2-3 minutes until the zucchini noodles are slightly softened but still crisp.
  8. Remove the skillet from heat and garnish with freshly chopped parsley.
