Ingredients

  • For the Pancakes:

    • 2 cups almond flour (240g)
    • 2 tablespoons coconut flour (14g)
    • 2 teaspoons baking powder (10g)
    • 1/2 teaspoon ground cinnamon (1g)
    • 1/4 teaspoon salt (1.5g)
    • 4 large eggs
    • 1/4 cup unsweetened almond milk (60ml)
    • 2 tablespoons melted coconut oil (30ml)
    • 2 tablespoons granulated erythritol (24g)
    • 1 teaspoon vanilla extract (5ml)
  • For the Cinnamon Swirl:

    • 2 tablespoons unsalted butter, melted (30g)
    • 2 tablespoons granulated erythritol (24g)
    • 1 teaspoon ground cinnamon (2g)
  • For the Cream Cheese Glaze:

    • 4 ounces cream cheese, softened (113g)
    • 2 tablespoons powdered erythritol (24g)
    • 2 tablespoons heavy cream (30ml)
    • 1/2 teaspoon vanilla extract (2.5ml)

Cooking Instructions

  1. In a large bowl, whisk together the almond flour, coconut flour, baking powder, ground cinnamon, and salt.
  2. In a separate bowl, whisk together the eggs, almond milk, melted coconut oil, granulated erythritol, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until well combined.
  4. In a small bowl, mix together the melted butter, granulated erythritol, and ground cinnamon for the cinnamon swirl.
  5. Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of the pancake batter onto the skillet and spread it out into a circle.
  6. Drizzle a small amount of the cinnamon swirl mixture onto the pancake and use a toothpick or skewer to swirl it into the batter.
  7. Cook the pancake for 2-3 minutes, or until bubbles form on the surface. Flip the pancake and cook for an additional 1-2 minutes, or until cooked through. Repeat with the remaining batter and cinnamon swirl mixture.
  8. In a mixing bowl, beat the softened cream cheese, powdered erythritol, heavy cream, and vanilla extract until smooth and creamy.
  9. Serve the pancakes warm with a dollop of cream cheese glaze on top.
