  • 4 salmon fillets (6 ounces each) (170g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon butter (14g)
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth (60ml)
  • 1 cup heavy cream (240ml)
  • 1/4 cup grated Parmesan cheese (25g)
  • 1/2 cup sun-dried tomatoes, drained and chopped (75g)
  • 2 cups fresh spinach leaves (60g)
  • Fresh parsley, for garnish

Cooking Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until cooked through. Remove the salmon from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, until fragrant.
  4. Pour in the chicken broth and bring to a simmer. Cook for 2-3 minutes to reduce slightly.
  5. Reduce the heat to low and add the heavy cream and grated Parmesan cheese to the skillet. Stir until the cheese has melted and the sauce is smooth.
  6. Stir in the sun-dried tomatoes and spinach leaves. Cook for 2-3 minutes, until the spinach has wilted.
  7. Return the salmon fillets to the skillet and spoon the creamy sauce over them. Cook for an additional 2-3 minutes to heat through.
  8. Garnish with fresh parsley and serve hot.
