    • 4 large eggs
    • 3/4 cup powdered erythritol (90g)
    • 2 tablespoons almond flour (15g)
    • 1/4 teaspoon baking powder
  • Special notes:

    • For powdered erythritol, you can grind granulated erythritol in a blender or food processor until it reaches a powdered consistency.
    • Make sure to use fresh lemon juice for the best flavor.

Cooking Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang on the sides for easy removal.

  2. In a medium bowl, combine the almond flour, powdered erythritol, and salt for the crust. Mix well.

  3. Add the melted butter to the bowl and stir until the mixture resembles coarse crumbs.

  4. Press the crust mixture into the bottom of the prepared baking dish, creating an even layer. Bake in the preheated oven for 10 minutes, or until lightly golden.

  5. While the crust is baking, prepare the filling. In a large bowl, whisk together the fresh lemon juice, lemon zest, eggs, powdered erythritol, almond flour, and baking powder until well combined.

  8. Remove the lemon bars from the oven and allow them to cool completely in the baking dish.
