Ingredients

  • 4 large bell peppers, any color
  • 1 pound (450g) ground beef
  • 1/2 cup (120ml) low-carb tomato sauce
  • 1 cup (112g) shredded mozzarella cheese
  • 1/4 cup (28g) sliced black olives
  • 1/4 cup (28g) sliced pepperoni
  • 1 teaspoon (5g) dried oregano
  • 1/2 teaspoon (2.5g) garlic powder
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Special Note: Feel free to customize the toppings according to your preferences. You can add mushrooms, onions, or any other low-carb veggies you like.

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them in a baking dish, cut side up.
  3. In a skillet over medium heat, cook the ground beef until browned and cooked through. Drain any excess fat.
  4. Add the tomato sauce, dried oregano, garlic powder, salt, and pepper to the skillet with the ground beef. Stir to combine and let it simmer for a few minutes.
  5. Spoon the ground beef mixture into each bell pepper until they are filled to the top.
  6. Sprinkle shredded mozzarella cheese on top of each stuffed pepper.
  7. Arrange sliced black olives and pepperoni on top of the cheese.
  8. Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  9. Remove from the oven and let them cool for a few minutes.
  10. Garnish with fresh basil leaves before serving.
