  • 8 small flour tortillas
  • 2 cups sliced mushrooms
  • 2 cups fresh spinach
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon chipotle pepper in adobo sauce, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Cooking Instructions

  1. In a small bowl, combine the mayonnaise and minced chipotle pepper to make the chipotle mayo. Set aside.
  2. Heat the olive oil in a large skillet over medium heat. Add the mushrooms and cook until they start to brown, about 5 minutes.
  3. Add the spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

  9. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  10. Remove the quesadilla from the skillet and repeat with the remaining tortillas and filling.
  11. Cut the quesadillas into wedges and serve hot with the chipotle mayo and optional toppings.
