Ingredients:

  • 4 bell peppers (any color)
  • 1 cup cooked quinoa
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional)
  • Lime wedges, for serving

Note: You can adjust the amount of spices according to your preference. Feel free to add more or less depending on your taste.

Cooking Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large mixing bowl, combine cooked quinoa, black beans, corn kernels, diced tomatoes, red onion, cilantro, cumin, chili powder, garlic powder, salt, and black pepper. Mix well to combine all the ingredients.
  4. Stuff each bell pepper with the quinoa and black bean mixture until they are full. Place the stuffed bell peppers in a baking dish.
  5. If desired, sprinkle shredded cheddar cheese over the top of each stuffed bell pepper.
  6. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  7. After 30 minutes, remove the foil and continue baking for an additional 10 minutes, or until the bell peppers are tender and the cheese is melted and bubbly.
  8. While the stuffed bell peppers are baking, prepare the avocado lime sauce. (Instructions below)
  9. Once the stuffed bell peppers are done, remove them from the oven and let them cool for a few minutes.
  10. Serve the stuffed bell peppers with a drizzle of avocado lime sauce and lime wedges on the side.

Avocado Lime Sauce:

  • 1 ripe avocado
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Water (as needed to adjust consistency)
  1. In a blender or food processor, combine the avocado, lime juice, chopped cilantro, salt, and black pepper.
  2. Blend until smooth and creamy, adding water as needed to adjust the consistency to your liking. The sauce should be pourable but not too thin.
