  • 1 carrot, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • Salsa, for serving
  • Fresh cilantro, for garnish

Cooking Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and translucent, about 2 minutes.
