  • 4 bell peppers (any color)
  • 1 cup quinoa, rinsed and drained (180g)
  • 1 can chickpeas, drained and rinsed (15 oz or 425g)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup vegetable broth (240ml)
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley, for garnish

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.
  3. In a large skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent and fragrant.
  4. Add the rinsed quinoa, chickpeas, cumin, paprika, chili powder, salt, and black pepper to the skillet. Stir well to combine all the ingredients.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  6. Fill each bell pepper with the quinoa and chickpea mixture until they are all evenly stuffed.
  7. If desired, sprinkle shredded cheese on top of each stuffed bell pepper.
  8. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the bell peppers are tender.
