- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 cup cooked quinoa
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14 oz) can crushed tomatoes
- 1/2 cup vegetable broth
- Fresh parsley, for garnish
Cooking Instructions
- Preheat the oven to 375°F (190°C).

- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
- In a mixing bowl, combine the cooked spinach, crumbled feta cheese, cooked quinoa, dried oregano, salt, and black pepper. Mix well.
- Stuff each bell pepper with the spinach and feta mixture, pressing it down gently to fill the peppers evenly.
