  • 4 large bell peppers
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 cup cooked quinoa
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14 oz) can crushed tomatoes
  • 1/2 cup vegetable broth
  • Fresh parsley, for garnish

Cooking Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  5. In a mixing bowl, combine the cooked spinach, crumbled feta cheese, cooked quinoa, dried oregano, salt, and black pepper. Mix well.
  6. Stuff each bell pepper with the spinach and feta mixture, pressing it down gently to fill the peppers evenly.
  7. In a separate bowl, mix together the crushed tomatoes and vegetable broth. Pour the tomato sauce over the stuffed peppers in the baking dish.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 5 minutes to allow the tops of the peppers to brown slightly.
  9. Remove from the oven and let the stuffed peppers cool for a few minutes before serving.
  10. Garnish with fresh parsley and serve hot.
