  • 4 medium zucchinis, spiralized into noodles

  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup bean sprouts
  • 1/2 cup chopped green onions
  • 1/4 cup chopped roasted peanuts
  • Fresh cilantro, for garnish

For the sauce:

  • 1/4 cup smooth peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons water, as needed to thin the sauce

Cooking Instructions

  1. In a small bowl, whisk together all the sauce ingredients until smooth. Set aside.

  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add the red bell pepper and carrot to the skillet and stir-fry for 2-3 minutes until slightly softened.
